The discovery of the method of obtaining flour from cereals in history, a simple bun, lavash, bread, cake, etc., which is shaped by mixing the flour with water, the adventure of the cake or cake in history began with baking. One of the important developments in the adventure of today's pastry or cake is the use of food, Donuts, lavash, bread, cake, etc. after cooking, sweetened with honey and used in religious rituals in which gratitude to the gods is offered. This study is aimed to determine the developments in the historical adventure of pastry for thousands of years and to bring these developments together under a scientific study. In this context; literature review techniques were used. The information obtained from the literature was examined in chronological order. The developments regarding pastry in history respectively; Prehistoric Ages and Ancient Ages, Medieval Ages, New Ages, and Modern Ages were examined and determined. Later, the developments in the history of our country's (Türkiye) pastry are evaluated under a separate heading. As a result; The developments in the history of pastry have been summarized in chronological order, and very important findings related to pastry have been reached. In addition, the generally irregular information in the literature has been gathered under a scientific study.
