Abstract

Local foods; bringing together the raw materials identified with the region is an important tool in reflecting the social culture with its local cooking techniques and presentation features. Local dishes, which have a wide place in cultural promotion, are an indicator of cultural heritage and also a touristic product for the destination. Milas is one of the biggest districts of Muğla province. There are many ancient cities in the district, which was the capital of the Caria Civilization and the Menteşe Principality. This historical richness has been reflected in the cuisine of the region and has caused the district to have a very rich food culture. Based on this reason, in this study, the food culture of the Muğla Milas district has been examined. The aim of the study; It gives information about the Milas tray pastry, which is a geographical product registration in the type of geographical indication, which is the symbol of Milas cultural heritage, and reveals the cultural value of the food for the local people. Secondary data was used in this study, which was put forward in the case study pattern, which is one of the qualitative research methods, and the study was concluded with document analysis. As a result of the research, it has been revealed that herbs, which are famine food, are used with great dexterity in Milas tray pastry and all other ingredients are made up of products produced in Milas. It has also been observed that those who tasted the pastry visited the destination only for this pastry.
